Cameron Lamb - Patissier

Cameron has baked from an early age. He remembers baking scones and as a youngster at his grandparents during the school holidays and with his mum. This blossoming passion for all things sweet then took him towards studying at West Nottinghamshire College where he earnt his VRQ Levels 1 to 3 in professional cookery from 2011 to 2013.

Cameron thrived in this subject area and got good grades throughout his time at college.

He said: “I enjoyed life at West Notts because we were treated differently from school – like young adults rather than children. I made some really good friends there and learnt so much.”

Cameron continued his studies in Nottingham on a patisserie and confectionary course to further his knowledge and expertise.

What did you do after studying at West Notts College?

I attended a specialist workshop run by Eric Lanlard in London. Eric is a well-known award-winning master patissier who owns the Cake Boy shop and café in London. At the same time I worked within the industry in Nottingham to gain experience of working in a commercial kitchen.

I kept in touch with Eric and to my surprise, he contacted me to say he had a vacancy in his kitchen at the Cake Boy shop in London! He’d recognised the passion in me and offered me the job of patissier.

Would you say this is your dream job?

It's definitely my dream job. It was always my aim to get there. I always said I wanted to work for him – that would be the peak of my career if I ever got there.

I always used to say if I get to Cake Boy I've got to where I want to be in my career. I was hoping to get there by maybe 30, so it's good to do it after five years.

Eric has always been my inspiration. I saw his TV programmes – I like his style. Any time I made any of his recipes I'd tag him in on Twitter.

Where would you like to see your career going over the next few years?

Within the next few years, I would like to still be working for Eric Lanlard. I wish to gain experience and to continue training with Eric and progress within my career. I haven't set any new goals as of yet as my goal was to work for Eric Lanlard.
